FRIED LOBSTER WITH ASPARAGUS SPEARS
Ingredients:
• 1 lobster
• 1 tbsp light soya sauce
• ½ tsp sesame oil
• ¼ tsp ground pepper
• 150g asparagus spear
• 1 small carrot - flower cut into slices
• 1 red fresh chilli-slant cut into pcs
• 3 tbsp cooking oil 1 clove garlic - chopped finely
• 3 slices ginger
• 1 tbsp Chinese wine Method
Instructions:
1. Pull body away from lobster head.
2. Remove flesh from shell. Wash and drain.
3. Cut meat according to the line into pieces.
4. Season with light soya sauce, sesame oil and pepper. Keep aside.
5. Heat wok with oil, fry garlic and ginger slices until fragrant, add in asparagus, carrot, chilli and stir fry until cooked.
6. Add in lobster meat and Chinese wine, stir fry over high flame for 2 minutes.
7. Remove and serve hot.
